The motorcycle in the video is a 2006 American Ironhorse Texas Chopper. The carburetor is a S&S Super G.
The S&S carburetor work was done by Curtis of Wild Steed Worx located in El Cajon, CA.
S&S carburetors are used on the Ironhorse, Big Dog & many Harley-Davidson models.

S&S Cycle develops performance replacement engines for American v-twin motorcycles, most of which are replacement engines for Harley-Davidson models and are manufactured in the United States. In addition, S&S Cycle developed their own proprietary pushrod v-twin engine, dubbed the X-Wedge that features a 56° cylinder angle instead of a stock 45° found in a majority of v-twin engines, which was developed with the custom motorcycle builder (OEM) in mind. The X-Wedge recently found a different kind of application, having been chosen to be the power plant utilized by Morgan Motor company, based out of the United Kingdom, for their development of the Morgan 3 Wheeler cycle car.
S&S was the first motorcycle engine manufacturer to produce pre-certified United States Environmental Protection Agency compliant engines, lifting the burden and cost of performing the complicated EPA testing procedures from the companies and enthusiasts who buy S&S engines. The company also produces TÜV certified engines, and has even succeeded in complying with California’s unique emissions requirements.

American IronHorse was an American motorcycle manufacturer that was founded in 1995 by Tim Edmundson and Bill Rucker. At one time, AIH was the largest factory producer of custom motorcycles in the USA. Their 224,000-square-foot (20,800 m2) factory was located in Fort Worth, Texas, and housed the complete manufacturing process under a single roof. Although most (305) parts for the bikes were made in-house, such as the seats and wheels, all American IronHorse motorcycles were built with S&S engines and were assembled in-house. In Spring 2008, American Ironhorse ceased production on all cycles and most company assets were liquidated at auction.
